Restaurant Internship at Mon Atelier

 

I had the privilege of interning at Mon Atelier, an intimate Italian restaurant located in the heart of Tokyo. Tucked behind a discrete entrance with an elegant but inviting atmosphere, the restaurant is committed to creating a personalized experience for guests. Coming into the internship, I expected a strict and intense environment given the high standards of fine dining. Instead, I was welcomed by a warm, open staff who invited me to learn from and experience their daily operations.

After an initial session of getting to know the restaurant and its staff, I put on the uniform and got started. From setting tables to rolling up my sleeves in the kitchen, I gained hands-on experience in both front-of-house service and culinary preparation, learning firsthand that exceptional hospitality requires immense precision and care.

Careful Execution in the Dining Room

My time serving in the dining room was an exercise in focus and adaptability. I set tables, cleared dishes, and served guests directly. One of my biggest challenges was explaining the menu; navigating complex Italian terminology and unfamiliar ingredients tested my memory, but it taught me how to communicate the chef’s vision to guests. Even simple tasks required extra concentration, like carefully balancing heavy plates while wearing slippery service gloves. Through every interaction, I learned that good hospitality means anticipating a guest's needs, whether that meant adjusting our timing or simply welcoming them in from the hot summer weather.

Hands-On Craft in the Kitchen

Inside the kitchen, I stepped out of my comfort zone and immersed myself in the work. I worked directly with unique ingredients, including handling a whole raw octopus before the chef began preparing it. During a trial pasta-making session, I learned how much precision goes into achieving the perfect texture and timing the cook precisely with the sauce. I also observed the delicate science behind the chef's culinary techniques, like whisking olive oil after letting it sit to transform it into a light, creamy foam. Beyond cooking, I saw how much calculation goes into daily prep, ingredient sourcing, and menu design.

Anticipation and Teamwork

Smooth operations relied entirely on constant communication between the kitchen and floor. I worked alongside the staff to inspect glassware for spots, manage service timing, and keep the energy positive. When minor missteps happened, I learned to apologize quickly, reset, and keep moving.
